Ingredients
1 tablespoon butter
3 medium potatoes, peeled and cubed
4 yellow squash, cubed
4 fresh tomatoes, peeled and chopped
1 medium onion, chopped
Salt and pepper to taste
Directions
Place butter in a skillet over medium heat. Stir in potatoes, squash, tomatoes, and onion. Season with salt and pepper. Cook, stirring occasionally, until tender, about 30 minutes.
